It's my favorite season and pumpkin is one of those flavors that brings it home. The pumpkin cake was a recipe from one of my favorite books - &lt;a href="http://www.amazon.com/Hello-Cupcake-Irresistibly-Playful-Creations/dp/0618829253/ref=sr_1_1?ie=UTF8&amp;amp;s=books&amp;amp;qid=1253034868&amp;amp;sr=8-1"&gt;Hello Cupcake &lt;/a&gt;by Karen Tack and Alan Richardson. It's a modified cake mix recipe so you start with &lt;strong&gt;a box of yellow cake mix&lt;/strong&gt; (I use Duncan Hines) and add to it: &lt;strong&gt;1 cup of canned pumpkin, 1 tsp. pumpkin pie spice, 3/4 c. of butermilk (instead of the water called for on the box), 1/3 c. of oil (instead of the amount called for on the box), and 4 large eggs (one more than the 3 called for on the box)&lt;/strong&gt;. The directions and baking times are the same as on the box. I made some cream cheese icing and topped each of the cupcakes with a candy corn pumpkin. The tentacles were carved down from 2 layers of 10" round cakes and the squid body consists of 2 layers of 6" round cakes. I piped our league name (foregone conclusion) on his hat (spelled terribly wrong of course). The hat consists of 2 layers of 6" round cake (the top layer wasn't leveled) and is covered in white and blue fondant. Because the cake was so tall, the hat sits on a separate 6" cardboard round so that it could be removed from the body and cut separately. It consists of at least 5 thin layers of sponge cake, filled with rich chocolate buttercream and topped with wedges of caramel.&lt;br /&gt;&lt;br /&gt;The cake was trying on my patience at times but totally worth the challenge. I'll be taking it to family this weekend to sample - they've been begging me to bring them something : )&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:85%;color:#999999;"&gt;&lt;em&gt;&lt;strong&gt;The August 2009 Daring Bakers' challenge was hosted by Angela of A Spoonful of Sugar and Lorraine of Not Quite Nigella. Using the bottom of a 9" (23cm) springform tin as a template and a dark pencil or a pen, trace a circle on each of the papers, and turn them over (the circle should be visible from the other side, so that the graphite or ink doesn't touch the cake batter.)&lt;br /&gt;3.Beat the egg yolks, 2/3 cup (81g) of the confectioner's (icing) sugar, and the vanilla in a medium bowl with a mixer on high speed until the mixture is thick, pale yellow and forms a thick ribbon when the beaters are lifted a few inches above the batter, about 3 minutes. (You can do this step with a balloon whisk if you don't have a mixer.)&lt;br /&gt;4.In another bowl, using clean beaters, beat the egg whites until soft peaks form. Gradually beat in the remaining 2/3 cup (81g) of confectioner's (icing)sugar until the whites form stiff, shiny peaks. Using a large rubber spatula, stir about 1/4 of the beaten whites into the egg yolk mixture, then fold in the remainder, leaving a few wisps of white visible. Combine the flour and salt. Sift half the flour over the eggs, and fold in; repeat with the remaining flour.&lt;br /&gt;5.Line one of the baking sheets with a circle-marked paper. Using a small offset spatula, spread about 3/4cup of the batter in an even layer, filling in the traced circle on one baking sheet. Bake on the top rack for 5 minutes, until the cake springs back when pressed gently in the centre and the edges are lightly browned. While this cake bakes, repeat the process on the other baking sheet, placing it on the centre rack. When the first cake is done, move the second cake to the top rack. Invert the first cake onto a flat surface and carefully peel off the paper. Slide the cake layer back onto the paper and let stand until cool. Rinse the baking sheet under cold running water to cool, and dry it before lining with another parchment. Continue with the remaining papers and batter to make a total of six layers. Completely cool the layers. Using an 8" springform pan bottom or plate as a template, trim each cake layer into a neat round. (A small serrated knife is best for this task.)&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;div align="left"&gt;&lt;span style="font-size:85%;"&gt;&lt;strong&gt;Directions for the chocolate buttercream:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1.Prepare a double-boiler: quarter-fill a large saucepan with water and bring it to a boil.&lt;br /&gt;2.Meanwhile, whisk the eggs with the sugar until pale and thickened, about five minutes. You can use a balloon whisk or electric hand mixer for this.&lt;br /&gt;3.Fit bowl over the boiling water in the saucepan (water should not touch bowl) and lower the heat to a brisk simmer. Cook the egg mixture, whisking constantly, for 2-3 minutes until you see it starting to thicken a bit. Whisk in the finely chopped chocolate and cook, stirring, for a further 2-3 minutes.&lt;br /&gt;4.Scrape the chocolate mixture into a medium bowl and leave to cool to room temperature. It should be quite thick and sticky in consistency.&lt;br /&gt;5.When cool, beat in the soft butter, a small piece (about 2 tablespoons/30g) at a time. An electric hand mixer is great here, but it is possible to beat the butter in with a spatula if it is soft enough. You should end up with a thick, velvety chocolate buttercream. Chill while you make the caramel topping.&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;div align="left"&gt;&lt;span style="font-size:85%;"&gt;&lt;strong&gt;Directions for the caramel topping:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1.Choose the best-looking cake layer for the caramel top. To make the caramel topping: Line a jellyroll pan with parchment paper and butter the paper. Place the reserved cake layer on the paper. Score the cake into 12 equal wedges. Lightly oil a thin, sharp knife and an offset metal spatula.&lt;br /&gt;2.Stir the sugar, water and lemon juice in a small saucepan. Bring to a boil over a medium heat, stirring often to dissolve the sugar. Once dissolved into a smooth syrup, turn the heat up to high and boil without stirring, swirling the pan by the handle occasionally and washing down any sugar crystals on the sides of the pan with a wet brush until the syrup has turned into an amber-coloured caramel.&lt;br /&gt;3.The top layer is perhaps the hardest part of the whole cake so make sure you have a oiled, hot offset spatula ready. I also find it helps if the cake layer hasn't just been taken out of the refrigerator. I made mine ahead of time and the cake layer was cold and the toffee set very, very quickly—too quickly for me to spread it. Immediately pour all of the hot caramel over the cake layer. You will have some leftover most probably but more is better than less and you can always make nice toffee pattern using the extra to decorate. Using the offset spatula, quickly spread the caramel evenly to the edge of the cake layer. Let cool until beginning to set, about 30 seconds. Using the tip of the hot oiled knife (keep re-oiling this with a pastry brush between cutting), cut through the scored marks to divide the caramel layer into 12 equal wedges. Cool another minute or so, then use the edge of the knife to completely cut and separate the wedges using one firm slice movement (rather than rocking back and forth which may produce toffee strands). I chose the &lt;a href="http://redtopbrown.blogspot.com/2009/07/daring-bakers-july-challengemallows.html"&gt;mallows&lt;/a&gt; for the actual challenge but really wanted to do the milans as well. I finally got a chance to bake them yesterday. The process was fairly simple with a few exceptions: the cookies were difficult to pipe the exact same size and shape each time and the baking time was very important to get exactly right - otherwise the cookies would be too soft or too crispy.&lt;br /&gt;&lt;br /&gt;The cookies are very good...definitely better than their store-bought alter egos. In a mixer with paddle attachment cream the butter and the sugar.&lt;br /&gt;2. Add the egg whites gradually and then mix in the vanilla and lemon extracts.&lt;br /&gt;3. Add the flour and mix until just well mixed.&lt;br /&gt;4. With a small (1/4-inch) plain tip, pipe 1-inch sections of batter onto a parchment-lined sheet pan, spacing them 2 inches apart as they spread.&lt;br /&gt;5. Bake in a preheated 350 degree oven for 10 minutes or until light golden brown around the edges. Let cool on the pan.&lt;br /&gt;6. While waiting for the cookies to cool, in a small saucepan over medium flame, scald cream.&lt;br /&gt;7. Pour hot cream over chocolate in a bowl, whisk to melt chocolate, add zest and blend well.&lt;br /&gt;8. Set aside to cool (the mixture will thicken as it cools).&lt;br /&gt;9. Spread a thin amount of the filling onto the flat side of a cookie while the filling is still soft and press the flat side of a second cookie on top.&lt;br /&gt;10. I chose to do the Mallows first and hopefully will have enough time to do the Milanos over the next couple of days as well.&lt;/div&gt;&lt;div align="left"&gt;&lt;/div&gt;&lt;div align="left"&gt;There were three basic parts to these: a simple shortbread cookie base, homemade marshmallow topping, and chocolate glaze. In a mixer with the paddle attachment, blend the dry ingredients.&lt;br /&gt;2. On low speed, add the butter and mix until sandy.&lt;br /&gt;3. Add the eggs and mix until combine.&lt;br /&gt;4. Form the dough into a disk, wrap with clingfilm or parchment and refrigerate at least 1 hour and up to 3 days.&lt;br /&gt;5. When ready to bake, grease a cookie sheet or line it with parchment paper or a silicon mat.&lt;br /&gt;6. Preheat the oven to 375 degrees F.&lt;br /&gt;7. Roll out the dough to 1/8-inch thickness, on a lightly floured surface. Use a 1 to 1 1/2 inches cookie cutter to cut out small rounds of dough.&lt;br /&gt;8. Transfer to the prepared pan and bake for 10 minutes or until light golden brown. Let cool to room temperature.&lt;br /&gt;9. Pipe a “kiss” of marshmallow onto each cookie. Let set at room temperature for 2 hours.&lt;br /&gt;10. Line a cookie sheet with parchment or silicon mat.&lt;br /&gt;11. One at a time, gently drop the marshmallow-topped cookies into the hot chocolate glaze.&lt;br /&gt;12. Lift out with a fork and let excess chocolate drip back into the bowl.&lt;br /&gt;13. Place on the prepared pan and let set at room temperature until the coating is firm, about 1 to 2 hours.&lt;br /&gt;&lt;br /&gt;Note: if you don’t want to make your own marshmallows, you can cut a large marshmallow in half and place on the cookie base. Heat in a preheated 350-degree oven to slump the marshmallow slightly, it will expand and brown a little. Let cool, then proceed with the chocolate dipping.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Homemade marshmallows:&lt;/strong&gt;&lt;br /&gt;• 1/4 cup water&lt;br /&gt;• 1/4 cup light corn syrup&lt;br /&gt;• 3/4 cup (168.76 grams/5.95oz) sugar&lt;br /&gt;• 1 tablespoon powdered gelatin&lt;br /&gt;• 2 tablespoons cold water&lt;br /&gt;• 2 egg whites , room temperature&lt;br /&gt;• 1/4 teaspoon pure vanilla extract&lt;br /&gt;&lt;br /&gt;1. In a saucepan, combine the water, corn syrup, and sugar, bring to a boil until “soft-ball” stage, or 235 degrees on a candy thermometer.&lt;br /&gt;2. Sprinkle the gelatin over the cold water and let dissolve.&lt;br /&gt;3. Remove the syrup from the heat, add the gelatin, and mix.&lt;br /&gt;4. Whip the whites until soft peaks form and pour the syrup into the whites.&lt;br /&gt;5. Add the vanilla and continue whipping until stiff.&lt;br /&gt;6. Transfer to a pastry bag.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chocolate glaze:&lt;/strong&gt;&lt;br /&gt;• 12 ounces semisweet chocolate&lt;br /&gt;• 2 ounces cocoa butter or vegetable oil&lt;br /&gt;&lt;br /&gt;1. I have an immense weakness for anything minty (especially paired with chocolate) so it was obvious right away what I should do.  I thought of lots of different ideas using mint but ultimately decided on a cupcake version of my favorite coffee drink - the peppermint mocha.  The cupcake is mocha flavored, filled with dark chocolate/mint ganache and topped with fresh mint whipped cream.  I played around with the decorative toppings - using fresh mint leaves, red sugar sprinkles (like they put on top at starbucks), and chocolate chips.&lt;span style="font-weight: bold;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;The mocha cupcake recipe came from Julie Hasson's book &lt;a href="http://www.amazon.com/Best-Cupcake-Recipes-Julie-Hasson/dp/0778801128/ref=sr_1_1?ie=UTF8&amp;amp;s=books&amp;amp;qid=1248452910&amp;amp;sr=1-1"&gt;"125 Best Cupcake Recipes"&lt;/a&gt;.  The coffee flavor of the cake was just strong enough to be prominent without getting bitter or overwhelming and the cake was moist and dense. &lt;br /&gt;&lt;br /&gt;The chocolate ganache filling recipe is from my go-to cupcake blog: &lt;a href="http://cupcakeblog.com/?p=44"&gt;cupcake bakeshop by chockylit&lt;/a&gt;.  It was sweet and minty - although I think it could have been a little mintier. &lt;br /&gt;&lt;br /&gt;And the fresh mint whipped cream I just kind of made up but it turned out pretty tasty.  I made alot so that I would have extra to eat with all the fresh blueberries, blackberries, and strawberries I have in the fridge.  Here's the approximate recipe:&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: center;"&gt;&lt;span style="font-size:85%;"&gt;&lt;span style="font-weight: bold;"&gt;Fresh Mint Whipped Cream&lt;br /&gt;&lt;/span&gt;&lt;/span&gt;&lt;div style="text-align: left;"&gt;&lt;span style="font-size:85%;"&gt;&lt;span style="font-weight: bold;"&gt;&lt;br /&gt;&lt;/span&gt;1/2 c. fresh mint leaves (chopped)&lt;br /&gt;1/4 c. + 1 TBSP sugar&lt;br /&gt;4 TBSP water&lt;br /&gt;2 c. whipping cream&lt;br /&gt;&lt;br /&gt;In small saucepan over medium-low heat, stir together water, sugar, and mint leaves.  Heat until they begin to boil, stirring periodically.  Cover and remove from heat and let sit for about 1 hour.  Strain the syrup into a glass bowl and let cool. The party was casual - bbq and bluegrass - and the cake was the centerpiece.  I designed the cake around my grandmother's favorite flower - the sunflower - so the color scheme was determined by that.  My dad made the '50' topper for me (thanks, dad!).  The top layer of the cake is lemon pound cake with a lemon curd filling and the bottom layer is chocolate/vanilla marble pound cake.  The whole cake is iced with buttercream in a basketweave pattern and accented with gumpaste sunflowers.  My favorite part, the fondant bluebirds, were originally going to be on top but I made them a little too large. He is starting NC State in the fall so I thought a nice wolfpack (red and white) color scheme would be appropriate.  The cake was vanilla pound cake for the bottom layer and a dense chocolate cake for the top layer.  I iced the cake with buttercream and then covered it with a home-made marshmallow fondant.  The stripes and polka dots were made from Wilton's colored fondant.&lt;br /&gt;&lt;br /&gt;The marshmallow fondant was really good and very simple to make.  It was a little more difficult than the store-bought stuff to work with but looked great and tasted SO MUCH better.&lt;br /&gt;I got the marshmallow fondant recipe &lt;a href="http://whatscookingamerica.net/PegW/Fondant.htm"&gt;here&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt;My favorite parts of the cake were the 'graduation hat strawberries'.  The idea came to me one day and I immediately tried out a few to see if the idea would work. While the mixer is on low speed, gradually add the dry ingredientsa nd the milk to the creamed butter and sugar, adding the flour and milk alternately, beginning and ending with the flour.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="FONT-STYLE: italic"&gt;Pour the mixture into a greased and floured 10 inch tube pan and bake in a preheated oven at 300 degrees F. for 1.5 hours.&lt;/span&gt;&lt;br /&gt;&lt;/span&gt;&lt;br /&gt;This cake was a total success. It was dense and moist and had a subtle vanilla flavor. I had a few "taste-testers" (aka dessert moochers) and everyone loved it. After I had tapped out all of my local resources for cake decorating classes at the end of April, I needed something else to keep me occupied.  Baking has grown into a real passion for me and the Daring Bakers program seemed like a perfect fit for what I wanted.  A new recipe is chosen every month by the host/hostess and the Daring Bakers recreate the recipe and then blog about their efforts.  The bakers are supposed to follow the recipe exactly, except in cases of dietary need (vegetarian, gluten free, etc...). Bon Appetit!)&lt;/div&gt;&lt;strong&gt;&lt;em&gt;&lt;span style="font-weight: normal;"&gt;&lt;br /&gt;&lt;span style="color: rgb(192, 192, 192);"&gt;The May Daring Bakers’ challenge was hosted by Linda of make life sweeter! and Courtney of Coco Cooks. They chose Apple Strudel from the recipe book Kaffeehaus: Exquisite Desserts from the Classic Cafés of Vienna, Budapest and Prague by Rick Rodgers.&lt;/span&gt;&lt;/span&gt;&lt;/em&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;This challenge was really intimidating.  I was especially nervous to make the strudel dough and roll and stretch it to paper thinness.  But after letting the dough rest for a few hours, everything went very smoothly.  It was definitely time and space intensive (it was not intended to do this is tiny apartment kitchens)...but the end result was quite tasty.  It was also very satisfying to complete something totally new, I don't know if I would have ever attempted to make homemade strudel if it weren't for daring bakers.&lt;br /&gt;&lt;br /&gt;I'm going to include the recipe for those of you that might be interested:&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;&lt;span style="font-size:85%;"&gt;&lt;span style="font-style: italic; font-weight: bold;"&gt;Strudel dough&lt;/span&gt;&lt;/span&gt;&lt;/strong&gt;&lt;span style="font-size:85%;"&gt;&lt;span style="font-style: italic;"&gt;&lt;br /&gt;&lt;/span&gt;from “Kaffeehaus – Exquisite Desserts from the Classic Cafés of Vienna, Budapest and Prague” by Rick Rodgers&lt;/span&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;1 1/3 cups (200 g) unbleached flour&lt;br /&gt;1/8 teaspoon salt&lt;br /&gt;7 tablespoons (105 ml) water, plus more if needed&lt;br /&gt;2 tablespoons (30 ml) vegetable oil, plus additional for coating the dough&lt;br /&gt;1/2 teaspoon cider vinegar&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;1. Combine the flour and salt in a stand-mixer fitted with the paddle attachment. Mix the water, oil and vinegar in a measuring cup. Add the water/oil mixture to the flour with the mixer on low speed. You will get a soft dough. Make sure it is not too dry, add a little more water if necessary.&lt;br /&gt;Take the dough out of the mixer. Change to the dough hook. Put the dough ball back in the mixer. Let the dough knead on medium until you get a soft dough ball with a somewhat rough surface.&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;2. Take the dough out of the mixer and continue kneading by hand on an unfloured work surface. Knead for about 2 minutes. Pick up the dough and throw it down hard onto your working surface occasionally.&lt;br /&gt;Shape the dough into a ball and transfer it to a plate. Oil the top of the dough ball lightly. Cover the ball tightly with plastic wrap. Allow to stand for 30-90 minutes (longer is better).&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;3. It would be best if you have a work area that you can walk around on all sides like a 36 inch (90 cm) round table or a work surface of 23 x 38 inches (60 x 100 cm). Cover your working area with table cloth, dust it with flour and rub it into the fabric. Put your dough ball in the middle and roll it out as much as you can.&lt;br /&gt;Pick the dough up by holding it by an edge. This way the weight of the dough and gravity can help stretching it as it hangs. Using the back of your hands to gently stretch and pull the dough. You can use your forearms to support it.&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;4. The dough will become too large to hold. Put it on your work surface. Leave the thicker edge of the dough to hang over the edge of the table. Place your hands underneath the dough and stretch and pull the dough thinner using the backs of your hands. Stretch and pull the dough until it's about 2 feet (60 cm) wide and 3 feet (90 cm) long, it will be tissue-thin by this time. Cut away the thick dough around the edges with scissors. The dough is now ready to be filled.&lt;/span&gt;&lt;/p&gt;&lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;&lt;strong&gt;Apple strudel&lt;/strong&gt;&lt;br /&gt;from “Kaffeehaus – Exquisite Desserts from the Classic Cafés of Vienna, Budapest and Prague” by Rick Rodgers&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;2 tablespoons (30 ml) golden rum&lt;br /&gt;3 tablespoons (45 ml) raisins&lt;br /&gt;1/4 teaspoon ground cinnamon&lt;br /&gt;1/3 cup plus 1 tablespoon (80 g) sugar&lt;br /&gt;1/2 cup (1 stick / 115 g) unsalted butter, melted, divided&lt;br /&gt;1 1/2 cups (350 ml) fresh bread crumbs&lt;br /&gt;strudel dough (recipe below)&lt;br /&gt;1/2 cup (120 ml, about 60 g) coarsely chopped walnuts&lt;br /&gt;2 pounds (900 g) tart cooking apples, peeled, cored and cut into ¼ inch-thick slices (use apples that hold their shape during baking)&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;1. Mix the rum and raisins in a bowl. Mix the cinnamon and sugar in another bowl.&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;2. Heat 3 tablespoons of the butter in a large skillet over medium-high. Add the breadcrumbs and cook whilst stirring until golden and toasted. This will take about 3 minutes. Let it cool completely.&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;3. Put the rack in the upper third of the oven and preheat the oven to 400°F (200°C). Line a large baking sheet with baking paper (parchment paper). Make the strudel dough as described below. Spread about 3 tablespoons of the remaining melted butter over the dough using your hands (a bristle brush could tear the dough, you could use a special feather pastry brush instead of your hands). Sprinkle the buttered dough with the bread crumbs. Spread the walnuts about 3 inches (8 cm) from the short edge of the dough in a 6-inch-(15cm)-wide strip. Mix the apples with the raisins (including the rum), and the cinnamon sugar. Spread the mixture over the walnuts.&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;4. Fold the short end of the dough onto the filling. Lift the tablecloth at the short end of the dough so that the strudel rolls onto itself. Transfer the strudel to the prepared baking sheet by lifting it. Curve it into a horseshoe to fit. Tuck the ends under the strudel. Brush the top with the remaining melted butter.&lt;/span&gt;&lt;/p&gt; &lt;p style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;5. Bake the strudel for about 30 minutes or until it is deep golden brown. Cool for at least 30 minutes before slicing. Use a serrated knife and serve either warm or at room temperature. I wanted to do something savory that's individual elements translated well to cupcake form.  Everything about the twice baked potato was perfect for what I wanted.  The skin even makes a perfect edible cupcake liner.  The hubby and I had these as a side dish with dinner tonight and they were delicious!  I just have to share the recipe with you:&lt;br /&gt;&lt;br /&gt;&lt;div style="text-align: center; font-weight: bold;"&gt;&lt;span style="font-style: italic;"&gt;"Twice Baked Potato Cupcakes"&lt;/span&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt; (makes 4 cupcakes)&lt;/span&gt;&lt;br /&gt;&lt;/div&gt; &lt;span style="font-style: italic;"&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;Ingredients:&lt;/span&gt;&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; 2 medium sized Russet potatoes&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; 1/4 cup sour cream&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; 1/8 cup homemade buttermilk Ranch dressing&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; 1/4 cup milk&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; 4 slices cooked bacon&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; 4 Tbsp chives or green onions&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; 1/4 cup sharp cheddar cheese&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-style: italic;font-size:85%;" &gt; salt and pepper to taste&lt;/span&gt;&lt;span style="font-size:85%;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;/span&gt; &lt;span style="font-style: italic;font-size:85%;" &gt; Wrap potatoes in aluminum foil and bake in 400 degree oven for appoximately 1 hour (until soft).  Let cool until you can handle fairly easily.  Slice potatoes in half.  Take a small slice off the bottom of each half so that the halves sit flat in a muffin tin.  Scoop out the potato, leaving about a 1/8" layer of potato and skin for the "cupcake liner."  In a bowl, mash the scooped-out potato and add all other ingredients except for 1/8 cup of sour cream, 1 Tbsp of the chives, and 2 slices of bacon.  Combine the potato mixture thoroughly and pipe back into the liners (I used a large "star" tip).  Bake for an additional 20 minutes in the 400 degree oven until the tops are slightly browned.  Let cool for 5 minutes.  Pipe the remaining sour cream "icing" on each cupcake, sprinkle with remaining chives, and add 1/2 slice of bacon to the top. I tried a new vanilla cake recipe, which went really well, and we iced them with my basic buttercream.   We colored the icing to match the colors of the shower and piped the icing on with a few different star tips.  I added a sugar pearl to the top of the icing and it was a very cute extra level of detail. The chocolate cake is a recipe from the cupcake blog &lt;a href="http://cupcakeblog.com/?page_id=83"&gt;cupcake bakeshop by chokylit&lt;/a&gt; - it is a very dense chocolate cake, almost like a chocolate pound cake.  I think this is my new favorite chocolate cake recipe.  The cake was a small oval with 4 layers each separated by a buttercream dam and raspberry filling layer. I just used a french vanilla cake mix and infused it overnight with a vanilla sugar syrup.  The cake was very moist and really delicious.  Next, I took out cones from the top of the cupcake and added the raspberry filling.  I made the buttercream by adding 3 tablespoons of seedless raspberry jelly to my basic buttercream recipe.  Overall, everything was a huge success. I had to give this flower its own post because it turned out so well and I went a little crazy taking pictures of it.  Wilton calls it the fantasy flower because it's not based on a real flower.  It is made in two parts which are allowed to dry and then put together with "gum glue". I came home from class with everything in photo 1 - from top left to bottom right: 1 - carnation base, 2 - finished carnation with calyx, 3 - fondant daisy, 4 - fondant leaf, 5 - middle of fantasy flower, 6 - base of fantasy flower. We actually learned to make this last week in course 3, but I just got the chance to practice this week and get really good at it.  The rose is actually made of a fondant and gum paste blend, which allows it to set up a little faster.  The centers of the roses are made in advance and allowed to dry on toothpicks for 2 days (photo 1).  Next, the rose is made in 3 layers - you can stop after the 1st layer for a rose bud (photo 2), after the 2nd layer for a medium sized rose (photo 3), or finish the 3rd layer for a large rose (photo 4).  The rose is put together with either a vanilla extract used as an adhesive or some home-made "gum glue". Royal icing does have its advantages though - it's definitely easier and less time-consuming than fondant/gum paste, which is a huge concern when you're covering a cake in flowers. This was my first fondant cake from course 3 and my first time ever working with fondant.  It is a chocolate cake covered in white fondant and the pink ribbon and bow are made of fondant with a gum tex additive to make it stiffer.  The process is a lot of fun, although all the kneading gets tiresome after a while. The carrot cupcakes were made with a delicious Alton Brown recipe from my new baking book: &lt;a href="http://www.amazon.com/Im-Just-Here-More-Food/dp/1584793414/ref=sr_1_3?ie=UTF8&amp;amp;s=books&amp;amp;qid=1239720839&amp;amp;sr=1-3"&gt;I'm Just Here for More Food: Food x Mixing + Heat = Baking.&lt;/a&gt;  The cream cheese icing on these was particularly amazing.&lt;br /&gt;&lt;br /&gt;The coconut cupcakes were made with a combination of 2 family recipes.  I used my grandmother's recipe for 7-minute frosting and freshly grated coconut.  For those of you that have never done the whole 'breaking into a coconut' thing...it isn't for the faint-hearted.  It is a much more difficult and time-consuming process than the Food Network chefs would lead us to believe.  But, I have to say, as someone who doesn't particularly care for the taste of coconut, these were quite good.  So I have to think that the fresh coconut made all the difference.&lt;br /&gt;&lt;br /&gt;So after all the baking and icing was finished, I packed my cupcakes up in my new carrier.  This is by far the best purchase I have made in a while.  It holds 36 cupcakes and each one has it's own shallow ring to hold the cupcake in place but also allow you to easily take it out (without getting icing all over your fingers). For the past 3 weeks we have been making royal icing flowers and drying them in flower formers to save for our final cake.  In the first class we learned a few more buttercream flowers - rosettes, chrysanthemums, and rosebuds - but we didn't save any of those for the final cake.  In the second class we started the royal icing flowers - apple blossoms and violets - and we also made those cute color flow icing birds.  The color flow objects are very simiple to create but they are very fragile to store and transport.  In the third class we learned the last batch of royal icing flowers - a variation on the Wilton rose (the Victorian rose), daisies, daffodils, pansies, and primroses.  I have to say the flowers were intimidating at first, but after a little practice (each flower uses the same basic petal technique with slight variations) they became a lot easier.  Finally, in the last class we brought all of our dried flowers together and after learning the do the basketweave and a new rope border for the cake, put everything together. I found the recipe on one of my favorite cupcake blogs, &lt;a href="http://cupcakeblog.com/?p=26"&gt;Cupcake Bakeshop by Chocylit&lt;/a&gt;.  They were DELICIOUS!  The melt-in-your-mouth chocolate cake was exactly how it sounds - very rich and dense - more like a brownie than cake.  The whipped cream complimented the cake nicely because it was so light and subtle. The XBOX is yellow cake and the controller is chocolate - both covered in buttercream.  For the XBOX, I started by stacking 2 13x9 cakes and carved down from there.  For the controller, I used an 8" round cake, cut into 2 semicircles and stacked.  I wasted quite a bit of cake carving down to the shapes I needed, but I think the end result was worth it. I made a collection of miniature cheeseballs for the Academy Awards party.  I was looking for something to serve on my crate and barrel glass slab and when I found the recipe for these, I knew they would be perfect.
